Cinnamon is used in both sweet and savoury foods. Cinnamomum verum is sometimes considered to be “true cinnamon”. Also referred to as “cassia” to distinguish them from “true cinnamon”. Aggregate annual production of cinnamon and cassia amounts to 27,500–35,000 tons, worldwide. Sri Lanka produces 80–90% of the world’s supply of Cinnamomum verum. Cinnamon also cultivated on a commercial scale in Seychelles and Madagascar. Other major exporter of Cinnamon is Indonesia. India and Vietnam are also minor producers. Cinnamon bark is used as a spice. It is principally employed in cookery as a condiment and flavouring material. It is used in the preparation of chocolate, especially in Mexico, which is the main importer of cinnamon. In the Middle East, cinnamon is often used in savoury dishes of chicken and lamb. It is also used in many dessert recipes, such as apple pie, doughnuts, and cinnamon buns, as well as spicy candies, coffee, tea, hot cocoa, and liqueurs.
